Sébastien Daouze

Bar Manager

Born in Reims and raised in Côte des Blancs in the Champagne region, Sébastien started his career working in the vineyards and cellars of the region and early on, developed a keen interest in spirits. 
Wanting to put his experience in hospitality and spirits to use, Sébastien came to Toronto in 2015 to open his bar in 2016, Coq of the Walk and focus on his main passion: Absinthe. Shortly after, alongside his friend chef Joseph Shawana, he opened Kūkŭm Kitchen and in 2020 took the direction of Snakes & Lattes. 
Sébastien joined the Lucie team with a reignited passion for embarking guests on a journey, tailoring a unique experience and dedicating his time to curate an immersive spirits and cocktail menu.
