Thomas Santerre

Sommelier

Born and raised in Quebec City, Thomas grew up in a family where food and wine were cherished traditions. His grandfather, a culinary professor, instilled in him an appreciation for fine dining, and family dinners were always special occasions. Surrounded by great food and exceptional wines, Thomas developed a deep love for the culinary world from an early age.

As a student, Thomas worked in restaurants, where he found his passion for the industry. After completing college, he decided to leave football behind and fully immerse himself in the restaurant business. He embarked on his sommelier journey, studying wine in Quebec City while pursuing a business degree at Université Laval.

His first experience as a lead sommelier came in a renowned Italian bistro in Petit Champlain, Quebec City. Thomas then began following the Court of Master Sommelier (CMS) program, which led him to a pivotal role as Chef-de-Rang and assistant sommelier at the legendary Restaurant Le Saint-Amour. This institution, a cornerstone of Old Quebec City since 1978, provided Thomas with invaluable experience, allowing him to work with rare and exquisite wines.

Thomas is now a certified sommelier by the CMS, actively preparing for the advanced level. After two years at Le Saint-Amour, he moved to Toronto to take over the wine program at Lucie, where he manages and develops the restaurant’s collection. As a key member of Lucie’s managing team, Thomas continues to infuse his passion for gastronomy and fine wines, taking the dining experience to new heights.
